Hi I'm Jen and I'm a pumpkin addict!
Stop whatever you're doing and go make these cookies. They are soft, moist, and delicious!
Cookie Ingredients:
- 1 Cup Butter
- 1 Cup Canned Pumpkin
- 1 Cup Sugar
- 2/3 Cup Powdered Sugar
- 1 Teaspoon Vanilla
- 2 Eggs
- 4 Cups Flour
- 1/4 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 2 Teaspoons Pumpin Pie Spice
Glaze:
- 3 Cups Powdered Sugar
- 4 Tablespoons Water
- 1/4 Teaspoon Pumpkin Pie Spice
2. Gradually mix in wet ingredients. Cover and chill for 30 minutes.
3. Preheat oven to 350 and grease a cookie sheet.
4. Roll dough into 2 inch balls and place on baking sheet.
5. Optional - Use the bottom of a glass to flatten.
6. Bake for 10-12 minutes until cookies look dry.
7. Allow to cool and drizzle glaze on top.
8. Enjoy!
Today is a cheat day and these pumpkin cookies are too good not to eat. Back to healthy eating tomorrow.
